Zuchinni Goulash 2 servings 1 large onion 1/4 pound mushrooms 2 Tablespoons olive oil 1 pound ground beef
1 1/2 teasponns paprika 1/4 cup minced green pepper 2 Tablespoons fresh minced parsley 3/4 teaspoon salt 1/4 teaspoon pepper 2 teaspoon minced fresh Basil 2 cups peeled, diced tomatoes
6 zucchini, sliced diagonally Grated Parmesan cheese
Using a large pot, saute onion and mushrooms in oil until soft. Add ground beef, cook until crumbly. Add paprika, green pepper, parsley, salt, pepper, basil and tomatoes, cover and simmer 15 minutes.
Add zucchini to skillet; stir well, cover and simmer 20 minutes, until tender.
Serve in bowls and sprinkle with cheese.
