Zucchini Casserole
2 tablespoons olive oil 2 zucchini, sliced 1 sweet onion, sliced 28 oz can stewed tomatoes 1 to 1.5 c shredded mozzerella or Cheddar cheese
Heat olive oil in large skillet. Saute sliced zucchini and layer on bottom of casserole dish. Saute sliced onion and place on top of zucchini mixture. Add can of stewed tomatoes, top with mozzerella cheese. Bake in 350 degree oven for about 15 minutes or until cheese is golden brown.
