Stuffing for Green Peppers or Cabbage Serving Size : 8
2 tablespoons olive oil 2 cups onions, chopped 1/2 cup rice 1 teaspoon paprika 3 teaspoons tomato paste 1 teaspoon oregano 3 teaspoons fresh ginger root, grated 1 clove garlic, minced salt and pepper to taste 2 pounds ground turkey, pork or beef 1/4 cup chicken stock 1 pound tomato sauce
Heat oil in a large skillet over medium heat. Add onion and saute until translucent. Add rice and cook, stirring, until slightly browned. Add paprika, tomato paste, oregano, ginger root, garlic, salt, pepper and ground turkey. Mix well to combine and saute for 5 minutes. Stir in chicken stock and remove from heat. Stuff mixture into either green peppers or cabbage leaves, place in a baking dish and cover with tomato sauce. Bake, covered, in a preheated 350 degree oven for 1 hour.
