Squash Casserole

1 lb ground beef
1 onion, chopped
1 small red bell pepper, chopped
2 chayote sqush, chopped
salt and pepper
1/4 C bread crumbs

Preheat oven to 350F.

In a skillet, brown the ground beef, onion, and bell pepper. Drain.
Add chayotes and season to taste. Cook over low heat about 30
minutes or until the chayotes are tender. Pour into casserole dish
sprayed with PAM. Sprinkle bread crumbs over. Bake 20 minutes or
until bubbly.

If chayotes are unavailable, use pattypan squash.
