Spinach & Cheese Casserole 2 lbs frozen spinach 8 oz cream cheese 4 oz shredded Velveeta cheese 5 strips bacon cooked crispy and crumbled up 2 hard boiled eggs chopped 1 tbsp ground mustard 1 clove garlic, minced 1 cup whipping cream 1/4 cup butter salt and pepper Add garlic to spinach then cook according to spinach package directions. In a sauce pan add cream cheese, whipping cream, ground mustard, and butter. Using low heat melt all ingredients together while stirring. In a medium casserole dish stir together spinach, cream cheese mixture, eggs, salt and pepper, and bacon. Place it in a 350` oven for 30 minutes. After it's done, top it with the Velveeta.
