SPICY RED FLANNEL HASH

spray oil
1 onion, diced
340g can corned beef, chopped or use leftovers
425g can beetroot, drained
3 Tbsp finely chopped parsley
50g peppery salami, chopped
410g can tiny taters, drained and chopped (or cooked potatoes)
freshly ground pepper to taste

Spray a heavy frying pan with oil and saute onion until softened.
Place in a bowl with all the other ingredients and carefully mix.
Add a little milk or stock if too dry. Return to frying pan and
cook uncovered, over moderate heat for about 20 minutes. To serve,
turn the hash upside down on to a large plate.
