Mashed Potato Casserole
4 pounds potatoes milk 1 cup sour cream 8 oz. cream cheese, softened 1/4 cup butter 1 to 2 Tablespoons minced onion
Peel and quarter the potatoes and cook in water to cover until tender. Mash with a little milk. Add sour cream, cream cheese, and butter. Place in a buttered casserole. Dot with shredded cheddar or colby cheese, if desired. Bake about 1 hour in 350 degree oven.
