KUMARA, APPLE AND BACON CASSEROLE
400g peeled kumara (New Zealand sweet potato)
1 apples, peeled and thinly sliced
240g trimmed bacon
1/2 cup water
1/2 tsp whole seed mustard
pinch ground cloves
black pepper to taste
Cook kumara and slice thinly. Arrange layers of kumara, apple and
bacon in a greased casserole dish, finishing with a layer of kumara.
Combine the water, mustard, cloves and pepper and pour over the
mixture. Bake in preheated oven, 160 C. for 30-40 mins.
