Eggplant Casserole

1 large eggplant or 2 medium eggplants
1 cup bread crumbs
1/4 scalded milk
1/4 chopped onion
1 cup grated cheddar cheese
salt
pepper

Cut eggplant in cubes and cook in boiling water for 20 minutes
until soft. Dra in and salt eggplant. Put in baking dish. Add
breadcrumbs, milk, onion, and c heese, salt and pepper (to taste).
Mix together. Cook at 325 degrees F for 1/2 hour.
