Black-eyed pea/Cowpea Stew
1 C black-eye peas/cowpeas, cooked
1 onion, sliced
2 tomatoes, chopped
1/2 chili, chopped or 1/2 tsp chili powder
1 to 2 T red palm oil (or margarine, butter or oil)
salt and pepper
Mash the cooked peas. Heat the oil in a pan and cook the onion and
tomatoes for a few minutes, then add the beans, chili and seasoning.
Cook the mixture for 10 mins or until it combines well. Stir
occasionally and add a little water if it becomes to dry. Serve
hot with rice, fried plantains or mashed yams.
