2 eggs, beaten
2 cups milk
1 8 1/2 ounce package corn muffin mix
1/2 teaspoon salt
1 16 ounce bag frozen corn, thawed
1 cup minced onion
1 cup shredded Cheddar cheese
Mix eggs, milk, muffin mix, and salt in mixing bowl until smooth.
Stir in corn and onion. Pour batter into greased 8x12-inch baking
dish and bake at 375 degrees until crust is golden brown, about 60
minutes. Sprinkle cheese over top and bake until cheese melts,
another 5-7 minutes.
