Chicken Cheesy Mushroom
4 boneless, skinless chicken breasts
1 pkg fresh button mushrooms, sliced
sliced cheese (cheddar, cojack, jack or pepper jack)
1 cup milk
1 1/2 c flour
salt and pepper
oil for frying
Preheat oil in deep skillet. Season flour with salt, pepper,
cayenne and paprika. Dust breasts with flour, then dip into milk
and back in flour. Place in hot oil. fry until golden brown about
15 minutes, flipping once. Preheat oven to 350 degrees. Meanwhile,
saute mushrooms in 1 T butter.
Spray 9x13 baking dish. Place chicken in dish, top with sauteed
mushrooms. top with a Cheese slice. Place in oven for no more than
10 minutes. Serves 4.
