Chicken & Dumplings Casserole 09

Chicken & Dumplings
3-6 pounds stewing chicken or whole fryer 4 stalks celery 1 carrot 1 onion, cut up 2 sprigs parsley 1 bay leaf salt and pepper
Place chicken in large pot and cover with water and vegetables. Bring to boil reduce heat and simmer 2- 2 1/2 hours till chicken is done.
Remove chicken and cool to debone, then return to broth Make the dumplings.
Dumplings
1 cup all purpose flour 2 tea baking powder 1/2 teaspoon salt 2 Tablespoons snipped parsley 1 egg 1/4 cup milk or apple juice 2 Tablespoons butter, melted
Stir just till blended. Drop 6-8 dumplings from a spoon into boiling broth. Cover tightly, return to boiling and then reduce heat. Don't lift the lid. Simmer for 12-15 min or till done.
Remove dumplings and chicken to serving plate. Strain broth and bring 4 cups of the broth to boiling. Stir 1 cup cold water into 1/2 cup flour. Gradually add to boiling broth mixing well. cook and stir till bubbly. Stir in salt and pepper and pour over chicken and dumplings.
