Chicken & Dumplings Casserole 04

Chicken & Dumplings (PA Dutch pot pie)
1 cup flour 1 tablespoon shortening 1/2 teaspoon salt water as needed
1 whole chicken, skin removed and loose fat cut off 2-3 diced potatoes 1 large yellow onion diced salt and pepper to taste
Mix flour shortening and salt until it forms a crumb mixture. Mix in a little water at a time until the dough forms a ball. Flour and roll out the dough. Cut it into square pieces about 3/4 to 1 inch square. Let the noodles dry for 1 1/2 hours.
Meanwhile boil the chicken until cooked (use plenty of water for the chicken broth). Let chicken cool. Remove skin and bone and cut into pieces.
Boil the potatoes and onion in the broth until done, about 15 - 20 minutes. Then add the dough slowly (a few pieces at a time). Add the chicken. Cover and simmer for 1/2 hour.
Note: Not having had the recipe, I devised some of my own additions, a little corn, a little milk.
