Quick Cassoulet
6 oz. mild or spicy turkey sausage links 1 large onion, diced 1 tart apple, diced 1 cup defatted chicken stock, divided 2 tablespoons tomato paste 2 (19 oz) can navy beans, rinsed and drained 3 oz. smoked turkey breast, diced 1/2 teaspoon dried thyme 1/2 teaspoon ground black pepper 1 cup fresh bread crumbs (see note) 1/2 cup minced fresh parsley 2 teaspoons olive oil
In a large non-stick frying pan over medium heat, brown sausage. Remove to cutting board and slice into 1/2-inch pieces. Return to pan and add onion, apple and 2 tablespoons of stock. Saute 5 minutes, or until onions and apples are softened. Stir in tomato paste and remaining stock. Transfer to a large bowl. Stir in beans, turkey, thyme and pepper.
Coat a 3 quart casserole dish with non-stick spray. Add bean mixture. In a small bowl, mix bread crumbs, parsley and oil until oil is well distributed. Sprinkle over bean mixture. Bake 350 for 30 minutes. 4 servings
Note: To make fresh bread crumbs, tear bread slices into large chunks. Place in a food processor and crumble with on/off turns. Your may use any type of bread, including whole-wheat, oat, multigrain or white.
