Cabbage Casserole
1 small head cabbage chopped into about 1 inch pieces
1 can cream of potato soup
1 small onion finely chopped
1 egg
2 cups shredded cheddar cheese
3/4 cup mayonnaise
Herb flavored stuffing mix
melted butter
salt and pepper to taste
In a large bowl, combine chopped onion, potato soup, mayonnaise,
egg, cheese and salt and pepper. Stir until well mixed. Then add
chopped cabbage and mix well. Pour ingredients into a casserole
dish and top with a light layer of stuffing mix. Drizzle with melted
butter. Bake at 350 for about 40 minutes.
