Barley Casserole

6 Tbsps. butter or margarine
1 cup pearl barley
1 large onion, minced
3/4 to 1 cup sliced raw mushrooms or drained canned mushrooms
3 cups consomme or chicken bouillon, boiling
salt and pepper

Heat 2 Tbsps. butter and saute barley in it. Transfer barley to
heavy casserole. Heat 2 more Tbsps. butter and saute onion in it.
Add to barley. Saute mushrooms in remaining butter and add to
other ingredients. Stir in hot consomme and salt and pepper to
taste. Cook, covered, over lowest possible heat until barley is
tender and has absorbed the consomme. Depending on the kind of
barley used, this will take 25 to 45 minutes. Stir occasionally.
Makes about 6 servings.
